Polenta Casserole

I made this last night and brought it for lunch today and it was very yummy comfort food.

  1. 1 roll pre-made polenta
  2. 1/4 cup milk
  3. 1 egg
  4. 1/2 cup sharp cheddar
  5. 1 tbsp butter
  6. salt and pepper
  7. 1 bunch asparagus, 1 cup mushrooms, 1 cup onions, 1 cup peas (or 4 cups veggies of your choosing)
  8. 1/2 pound protein (turkey sausage, ham, black beans, etc)

Put the polenta in a pot on the stove with the milk and butter and heat until you can mix the ingredients smoothly. In the meantime, chop and saute your vegetables and meat. Mix vegetables and protein into the polenta mixture and stir in one egg, cheddar, salt and pepper. Pour into a greased shallow casserole dish and bake at 350 degrees for 30 minutes or until desired consistency.

Trust me when I say the crispy edges on top will be the tastiest part and SO hard to quit nibbling on! The sharp cheddar is what really keeps this from being a bland dish so keep that in mind if you substitute ingredients. Next time I make this, I will have to remember to post a photo!
